Crema is a slightly thickened cream often used to dollop over soups, tacos, or any dish that could benefit from a touch of richness. This creamy, slightly sour Mexican condiment falls somewhere between American sour cream and French crème fraîche. Fun and varied takes on crema are made with ingredients that can range from sour cream to Greek yogurt to mashed beans or avocado. Many incorporate a small amount of lime juice for just the right amount of tanginess.
