3 Boozy Ways to Enjoy Watermelon All Summer Long

One of our favorite things about summer is the food, obviously. We love dusting off our grills, cooking with seasonal produce, and spending more time together. This year, we’re all about the cocktails. What better way to round out your weekend barbecue than with a bev that stars the juiciest of summer fruits: watermelon. Here are some of the yummiest ways to enjoy watermelon for your partying pleasure this summer.

Watermelon Slushie

Watermelon, vodka and Prosecco are blended together in this boozy summer slushy that appears more complex than it really is.

(Serves 1)

Ingredients:
1 small watermelon
1 ounce vodka
2 ounces Prosecco

Instructions:
1. Dice watermelon into cubes and blend to yield about 8 ounces of watermelon purée.

2. Combine watermelon purée with vodka and Prosecco. Serve in a glass of your choice and garnish with lime.

Jello Shots

While we often shy away from Jello shots, we couldn’t resist these watermelon ones. Pair them with our shareable summer recipes and enjoy them with friends!

(Makes 40 shots)

Ingredients:
10 limes, pulp removed
1 box red Jello
1 cup boiling water
1 cup cold vodka
Mini chocolate chips or black sprinkles if desired

Instructions:
1. Cut limes in half, and using a paring knife carefully remove the pulp from the rind. Once you have removed all the fruit from inside of the rind, arrange limes, cut side up, on a tray.

2. In a small bowl, mix 1 cup of boiling water to the Jello powder, and stir for 2 minutes until fully dissolved. Add 1 cup of cold vodka. Carefully pour mixture into lime halves, filling all the way to the top. Chill in the fridge for at least 2 hours, until the Jello is set.

3. Using a sharp knife, carefully cut each lime half in half again. We made “seedless” watermelon shots, but you can stick in mini chocolate chips or black sprinkles, if desired, for seeds!

Boozy Plated Pop

For your summer partying pleasure, we dreamed up a boozy popsicle that is perfectly frosty and oh-so-fun.

(Serving depends on popsicle molds)

Ingredients:
1 small watermelon
1½ ounces of vodka
Blueberries

You’ll also need popsicle sticks and popsicle molds for this recipe.

Instructions:
1. Dice watermelon into cubes and blend to yield about 1 cup of watermelon purée.

2. Combine watermelon purée, vodka, and blueberries. Pour into molds and place sticks in mixture.

3. Freeze up to 4 hours or overnight. Run the molds under warm water for 30 seconds to help the popsicles release from the molds.

For the Kids: Mint-Watermelon Pop

Let everyone in on the fun with this kid-friendly watermelon pop.

(Makes 8 popsicles)

Ingredients:
4 cups diced seedless watermelon
2 tablespoons sugar
¼ cup mint leaves, minced
pinch kosher salt

You’ll also need popsicle sticks and popsicle molds for this recipe.

Instructions:
1. Dice watermelon into 1-inch cubes.

2. Combine watermelon and sugar in a blender and blend until smooth.

3. Add in the mint leaves and salt and puree until mixed throughout.

4. Pour mixture into 8 popsicle molds (or 2 ice cube trays) and place sticks into mixture. Freeze up to 4 hours or overnight. Run the molds under warm water for 30 seconds to help the popsicles release from the molds.
