Veggie burgers are the perfect treat for a summer barbecue or as a simple and satisfying supper any time of the year. We’ve compiled three vegetarian burger recipes that showcase the flavors of the ingredients to create a meal that vegetarians and omnivores alike will devour.
Vegetarian burgers should not be slabs of unidentifiable plant matter. Food blog Go Go Vegan shares an an easy recipe that includes chunks of mushroom to provide the burger with a wonderfully meaty texture.
Mushroom Burger Recipe
- 3 cups mushrooms, chopped
- 1 cup breadcrumbs
- 2 teaspoons yeast extract
- 1 garlic clove
- ½ teaspoon dried basil
- olive oil
Sauté the mushrooms then combine them with the garlic, breadcrumbs, olive oil, and basil. Add a spoonful of a yeast extract spread such as Marmite or Vegemite, which helps the patties stick together and lends richness to the flavor. Add water until the mixture is sticky enough to for patties. Fry the patties in oil then serve and enjoy!
Falafel Burger Recipe
This recipe from My Recipes uses a process similar to the one used to make falafel to create a soft and delicious vegetarian chickpea burger.
- 1 cup red onion, chopped
- ½ cup fresh parsley, chopped
- 2 tablespoons fresh lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon salt
- 2 cans chickpeas, drained
- 2 cloves garlic, minced
- ½ cup dry breadcrumbs, divided
- 4 teaspoons olive oil
Combine all ingredients except for the breadcrumbs and olive oil in a food processor and process until smooth. Transfer to a large bowl and stir in ¼ cup of breadcrumbs. Shape the mixture into six equal patties and coat with breadcrumbs. Heat the olive oil in a nonstick skillet over medium-high heat and cook patties until browned, about 3 minutes on each side. These burgers are great served on pita and topped with fresh lettuce and tomato!
Bean Burger Recipe
High in protein, fiber, iron, and other minerals, beans supply many of the nutrients that vegetarians do not get from meat. This burger recipe from MyRecipes uses black beans as a base for the burger.
- 1 hamburger bun, torn into pieces
- 3 tablespoons olive oil, divided
- 2 teaspoons garlic, chopped
- 1 can black beans, rinsed and drained
- 1 teaspoon lime rind, grated
- ¾ teaspoon chili powder
- ½ teaspoon fresh oregano, chopped
- ¼ teaspoon salt
- 1 large egg, lightly beaten
- 1 large egg white, lightly beaten
Place bun in food processor and process until crumbs measure about 1 cup then transfer to a bowl. Combine 1 tablespoon olive oil, garlic and beans in processor and combine into a thick paste. Combine in the bowl with the breadcrumbs and stir in remaining ingredients. Shape the mixture into four equal patties. Heat the rest of the olive oil in a nonstick skillet over medium-high heat and add the patties. Cook over medium heat until the edges are browned, about 3 to 4 minutes on each side.
