Summer Breakfast Is Best Served Chilled

With temperatures already balmy the minute you wake up, a refreshing, cold breakfast is the way to go to prepare you for the steamy day ahead. If you’re thinking cereal and milk, let’s challenge ourselves a bit. Instead, consider a thick smoothie bowl packed with produce, or a beautiful, ever-trendy açai bowl, or a yogurt parfait featuring bold and bright flavors. Pick up a big spoon, grab your cold brew or matcha, and get excited about these chill summer breakfasts.

Açai Bowl

Pronounced “Ah-Sigh-Eee,” the açai berry is native to South America and is often eaten in Brazil, where it grows in the Amazon rainforest. In recent years, the purple ingredient has taken the world by storm in the form of refreshing breakfast bowls. You can craft your own açai bowl using açai powder or pulp, then mix it up with any number of flavors. If you use powder, simply add ice cubes to the blender along with it. If you use pulp, make sure to break it into a few pieces before adding it to the blender. Here’s our go-to recipe:

1/2 cup frozen strawberries
1 frozen banana, sliced
1 pack açai purée, or 2 teaspoons açai powder with 3–4 ice cubes
1/2 cup frozen strawberries and blueberries
3–4 tablespoons rolled oats
2/3 cup almond milk, soy milk, or coconut water

Blend together, pour into a bowl and top with coconut flakes, chopped figs, berries, a drizzle of honey, and chopped nuts.

Smoothie Bowls

Grab a blender, some produce, and you’re good to go. Simple and straightforward, but even better since it’s served in a bowl. Here are two of our favorite varieties:

Go green

2 cups leafy greens (a mix of kale and spinach)
1 frozen banana, sliced
1 cup frozen pineapple
1 cup almond milk or coconut water

Blend it all together, pour into a bowl, and enjoy.

For the love of fruit

1 frozen banana, sliced
1/2 cup frozen mango
1/2 cup strawberries
1/2 cup almond milk
1/2 cup yogurt

Blend it all together, pour into a bowl, and enjoy!

Tropical Parfait

Though traditionally made with ice cream or frozen custard, a parfait is as delicious when prepared with yogurt and fruit, and topped with granola, nuts, more fruit…all of it. In this version, we’re embracing some gorgeous tropical fruits like mango, dragon fruit, and passion fruit, in addition to a slightly Greek yogurt.

2 cups Greek yogurt
Sliced dragon fruit
1 passion fruit
1 mango, diced
1/4 teaspoon vanilla extract
1/2 teaspoon maple syrup plus more for drizzling
Your favorite granola, for topping

In a medium bowl, whisk Greek yogurt, maple syrup, and vanilla extract until slightly fluffy. Then, spoon half of yogurt into the bottom of a glass bowl. Place half of fruit on top of yogurt, then top with remaining yogurt. Layer remaining fruit on top, and sprinkle over granola. Dig in!
