While February 14th is for celebrating our significant others, the day before is another story altogether. February 13th marks Galentine’s Day, a wonderful holiday celebrated by Leslie Knope on Parks and Recreation, in honor of all our lovely lady friends. Lighting a few candles (we prefer non-scented during cooking so that it doesn’t interfere with the heavenly scents of pizza and pasta) and maybe even rustling up some simple place cards and scattering some candy bracelets (remember those?!) on the table will heighten the Galentine’s day celebration for sure. Without further ado, an indulgent, sharing-approved menu that’s best paired with a bunch of buds.
Even if it’s a casual dinner party with just close friends, preparing a gorgeous meal can involve more than a little time at the stove (and away from your guests). So, why not start the Galentine’s day celebrations with a build-your-own bruschetta bar? Before guests arrive, lay out some toasts (you can toast your own baguette slices OR just buy little bruschetta toasts). Put some ricotta in a bowl (buy a little more than you need for the pizza recipe below) and sprinkle with chopped basil. Set out slices of prosciutto and other salumi, and maybe some sun-dried tomatoes, too! Pop it all on a cheese board or big cutting board with plenty of knives and plates, and let your guests DIY!
Cacio e Pepe Pizza
Pizza is obviously the best dish to split with a bunch of friends and especially when it’s Plated’s absolutely addictive cacio e pepe pizza inspired by one of our absolute favorite pastas (see: this recipe). This pie is the stuff dreams are made of, with a golden, chewy crust and a creamy sauce of mozzarella, Provolone, and black pepper, plus roasted garlic and dollops of ricotta. Spaghetti and Meatballs with Ricotta

These insanely simple chocolate truffles will wow your friends and add the perfect chocolatey note to cap off your ladies dinner. Pro tip: double the batch and bring them to work. Or just…save them for later.
