French Onion Soup Grilled Cheese

We can’t visit a French restaurant without immediately ordering French onion soup.  Melty, cheesy, and, ahem, filled with bread, it’s one of our absolute favorite dishes. Because we can’t resist a mashup (or a grilled cheese), we created this totally amazing soup and sandwich all-in-one. A decadent mix of gruyère and fontina is topped with sautéed onions and stuffed between slices of hearty sourdough bread. And, because dipping is the most fun, there’s a little extra onion soup on the side.

Cheddar Apple Grilled Cheese

The sweet and savory combination of cheddar cheese and apples gets us every.single.time. This autumnal sandwich combines lemony apple compote, cheddar cheese, and a hit of Dijon mustard for a flavor profile that packs a serious punch. The cheese becomes perfectly melty between sourdough slices, which are coated with mayonnaise for a crisp-golden brown outside. Fall in one bite.

Fontina and Brie Grilled Cheese with Fig Compote

While we can often be found eating straight brie and crackers (in very large quantities), the soft French cheese is equally fabulous in a sandwich. Combined with powerful fontina cheese and a sultry fig compote, this is a seriously next-level dish.

Grilled Cheese with Cranberry Compote

Because every holiday needs its own grilled cheese, we’ve created this Thanksgiving-inspired version. Tangy cranberries are cooked down with orange juice, cinnamon, and a hint of Aleppo pepper for a tart compote that you may even want to repurpose as cranberry sauce. The compote accompanies a gooey cheddar grilled cheese that’ll knock your socks off.

Spanakopita Grilled Cheese Sandwich

Not only is Spanakopita really fun to say, it’s also a delicious, must-order Greek dish of spinach, feta, and phyllo pastry. We channeled our love for this traditional appetizer into this genius grilled cheese sandwich, which combines mozzarella, feta, and spinach between slices of sourdough. The result is a perfect mix of salty richness balanced by garlicky sautéed spinach.
