A spin off of traditional coleslaw, we added fennel to this side! The coleslaw dressing recipe has Dijon mustard for a little bite, and less fat than your average slaw with only 2 tablespoons of mayonnaise.
Creamy Cabbage Fennel Slaw Recipe
- 1 fennel bulb, washed and thinly sliced
- 2 scallions, washed and thinly sliced
- 2 cups shredded cabbage
- ½ lemon, juiced
- 2 tablespoons mayonnaise
- 2 teaspoons Dijon mustard
- ½ teaspoon salt
Rinse and slice the fennel and scallions. Whisk together the lemon juice, mayonnaise, mustard, and ½ teaspoon salt. Stir in sliced fennel, sliced scallions, and shredded cabbage and mix well.
