We love this easy potato salad recipe! It’s a perfect accompaniment to a picnic or barbecue meal.
Chili Lime Potato Salad Recipe
Yield: 2 servings
One serving: 275 calories, 9g carbs, 14g fat
- ¾ pound red new potatoes, rinsed
- 1 lime, zested and juiced
- ½ teaspoon chipotle chile powder
- ¼ teaspoon salt
- ¼ pepper
- 2 tablespoons olive oil
1. Prepare Potatoes
Rinse and cut the potatoes in half. In a medium saucepan, cover potatoes with cold water. Bring water to a boil and allow it to simmer until the potatoes are tender, about 15 minutes. Drain and set aside.
2. Make Vinaigrette
Combine lime zest, lime juice, chipotle chile powder, salt and pepper in a bowl. Slowly add 2 tablespoons olive oil while quickly whisking until it gets thick.
3. Make Potato Salad
Toss the potatoes with vinaigrette. Taste and add more salt and pepper as needed.
