Baked Parsley Potato Chips Recipe
- 2 russet potatoes, very thinly sliced
- 1 tablespoon olive oil
- 1 tablespoon parsley, chopped
- sea salt
Preheat oven to 425° F. Wash the potatoes and slice them, widthwise, as thinly as possible. Lay in one even layer on a baking sheet and toss with 1 tablespoon olive oil, salt and pepper. Bake until golden brown and crisp, about 20 minutes. Toss with chopped parsley and sea salt.
