Make it at home:
Apricot-Maple Granola

Granola is a great breakfast staple to have on hand – sprinkle it on yogurt, pour milk over it, or grab a handful to go. We like to make it at home because you can control just what ingredients and sweeteners go into it. Take a second look at your box of cereal – many brands have much more sugar than you’d think and are not all that good for you! This simple recipe is sweetened with maple syrup and dried fruits.

Apricot-Maple Granola

  • 1 cup slivered almonds
  • ¾ cup dried apricots
  • ¾ stick butter (6 tablespoons)
  • ⅓ cup maple syrup
  • ⅛ teaspoon cinnamon
  • 4 cups rolled oats
  • ¼ teaspoon kosher salt
  • ¾ cup dried cranberries
  • 1 cup toasted sunflower seeds

Toast the almonds on baking sheet lined with parchment paper for 8 minutes at 300° F. Meanwhile, chop dried apricots.

Melt butter and mix with maple syrup, and cinnamon.  Stir in to rolled oats.

Spread oats out on baking sheet lined with parchment paper and sprinkle with salt.  Bake at 325° F for 20 minutes, then add sunflower seeds. Stir and return to oven for 10 minutes. Add cranberries and apricots, then bake for about 10 more minutes. When golden, remove from oven, pour into a bowl and mix in toasted almonds.

Store in an air-tight container and enjoy over yogurt, ice cream, or with milk!
