We love bulking up leafy green salads with hearty grains. Here, we use farro, an ancient grain with a chewy texture and nutty flavor. It's tossed with tender kale and harissa-lime dressing to form a base for pan-roasted chicken breasts. We season the meat with za'atar (a blend of sesame seeds, thyme, marjoram, and tart sumac berries) for tangy complexity, then garnish everything with toasted almonds.

Cooking Steps

  1. Prepare ingredients

    Prepare ingredients

    Bring a medium pot of water to a boil over high heat. Rinse all produce. Thinly slice carrots crosswise on a diagonal. Halve radishes, then thinly slice into half-moons. Halve lime.

  2. Cook farro and toast almonds

    Cook farro and toast almonds

    Season boiling water generously with salt. Stir in farro and cook until tender but still chewy, 12-14 minutes. Drain farro and return to pot, off heat. Meanwhile, place almonds in a medium pan over medium heat. Toast, stirring, until golden and fragrant, about 3 minutes. Transfer to a plate and set aside. Wipe pan clean for the next step.

  3. Sear za'atar chicken

    Sear za'atar chicken

    Pat chicken very dry with paper towel (this will help the skin crisp up in the pan) and season all over with za'atar, ½ teaspoon salt, and pepper as desired. Place pan from almonds over medium-high heat with 1 tablespoon olive oil. When oil is shimmering, add chicken skin-side down and sear until skin is golden and easily lifts from pan, 5-7 minutes (it'll finish cooking in the next step).

  4. Finish chicken

    Finish chicken

    Flip chicken, still over medium-high heat, and scatter around carrots in pan. Cook, stirring carrots, until chicken is cooked through and no longer pink and carrots are tender, 5-7 minutes. Remove pan from heat. Transfer chicken to a plate and set aside to rest for about 5 minutes, leaving carrots behind in pan for finishing the salad in Step 6.

  5. Make harissa-lime dressing

    Make harissa-lime dressing

    While chicken rests, pat kale dry with paper towel, stack leaves, and thinly slice, discarding long stems. Using your hands, massage kale until beginning to soften, 1-2 minutes. In a large bowl (big enough for the salad), whisk together harissa (feel free to use less for milder heat), juice of 1 lime, 2 tablespoons olive oil, ¼ teaspoon salt, and pepper as desired.

  6. Plate za'atar chicken

    Plate za'atar chicken

    To bowl with harissa-lime dressing, add feta, radishes, farro, sautéed carrots, and kale; toss to coat. Cut rested chicken into ¼-inch slices. Divide farro salad between serving bowls. Top with za'atar chicken and garnish with toasted almonds. Enjoy!
