Za’atar Chicken Schnitzel

Za’atar Chicken Schnitzelwith Israeli Salad

Whether between bites at a local neighborhood spot, or at a restaurant halfway around the world, our chefs are always asking, “How can I recreate this at home?!” And as it turns out, throughout her own culinary travels, food expert and writer Gail Simmons does just the same. Here, we’re sharing a recipe straight from the pages of her new cookbook, Bringing It Home, in which chicken is pounded, breaded, and pan-fried in the usual German schnitzel style, but with a trick Gail picked up in Israel: seasoning the breadcrumbs with za’atar spice blend. On top, there’s a bright salad of cucumber, tomato, bell pepper, and onion—tossed with lemon and herbs for more pop. This was the very first recipe Gail tested for her cookbook; how about being among the first to bring it home?
