We were all throwing elbows in the Test Kitchen to get a slice of this creamy, spicy, veggie-packed pie. This twist on a white pizza starts with a creamy béchamel mixed with mozzarella and spinach. It’s topped with rosemary-roasted cauliflower, an ideal match for the nutty whole-wheat crust. A drizzle of spicy honey is our absolute favorite way to finish this (or any) pizza. The balance of sweet and slow-building heat makes every slice more addictive than the last.

Cooking Steps

  1. Prepare ingredients

    Prepare ingredients

    Preheat oven to 425ºF. Place butter in a small bowl and set aside to soften at room temperature. Remove pizza dough from bag and let soften at room temperature. Rinse all produce. Cut cauliflower into ½-inch florets. Finely chop parsley leaves, discarding stems. Place whole garlic clove on a small piece of foil, and drizzle over olive oil. Bring edges of foil together and seal to form a pouch.  

  2. Roast cauliflower and garlic

    Roast cauliflower and garlic

    On a baking sheet, combine cauliflower, rosemary, crushed red pepper (skip or use half for less heat), 1 tablespoon olive oil, ½ teaspoon salt, and black pepper, then arrange in a single layer. Add garlic pouch to baking sheet and roast until cauliflower is golden and almost tender, 13-15 minutes (it will continue roasting on the pizza). Remove from oven and set aside until Step 5. 

  3. Make béchamel sauce

    While cauliflower roasts, add half of flour to bowl with butter and knead with your fingers to form a smooth paste. In a medium pot, bring milk, ½ teaspoon salt, and black pepper to a boil, whisking, over medium-high heat. Whisk in butter and flour mixture until dissolved, 30 seconds. Reduce heat to medium and whisk until thickened, 3-4 minutes more. Remove from heat, and stir in spinach and half of mozzarella and provolone.

  4. Roll out pizza dough

    Sprinkle remaining flour on a clean, dry surface, coating a rolling pin or your hands with a thin layer. Roll or stretch pizza dough into a rectangular shape, rotating frequently and working from center to edges, until ¼-inch thick. Once cauliflower is roasted, transfer to a large bowl, saving baking sheet for next step. Remove and discard rosemary. Carefully remove garlic from foil and finely chop.

  5. Assemble and bake pizza

    Assemble and bake pizza

    Line baking sheet from cauliflower with parchment paper and rub with 1 teaspoon olive oil. Add pizza dough and rub all over with 1 teaspoon olive oil. Spread over béchamel sauce, leaving a ½-inch border. Scatter over roasted cauliflower, garlic, and remaining mozzarella and provolone. Bake until crust is crisp and light golden and cheese is bubbling, 20-25 minutes.

  6. Finish pizza and plate

    While pizza bakes, set the table or relax with a glass of wine. Remove roasted cauliflower pizza from oven and garnish with parsley. Drizzle over Mike's Hot Honey, then cut into slices and dig in!
