Pizza Bianca with Figs, Ricotta, and Balsamic Glaze

Chef Michelle takes this gorgeous pizza bianca, or white pizza, up a notch (make that three notches) with dried figs, a trio of cheeses, and a tangy balsamic drizzle. The figs plump and soften in hot water while the pizza bakes to give them a juicier texture without losing their concentrated sweetness. And oh, those cheeses: Ricotta, Fontina, and Parmesan meld and melt over the rosemary-infused crust for one of our creamiest, cheesiest pies yet. No need to book that trip to Italy—tonight we’re bringing the trattoria to you.

Cooking Steps

  1. Prepare ingredients

    Prepare ingredients

    Preheat oven to 425°F. Remove pizza dough from bag and let soften at room temperature. Bring a small pot of water to a boil over high heat. Halve lemon. Strip rosemary leaves, discarding stems, then finely chop. Mince garlic, then place in a small bowl with ricotta and ¼ teaspoon salt and stir to combine. 

  2. Reconstitute figs

    When water is boiling, add figs, then cover pot, remove from heat, and set aside until Step 6. Meanwhile, in a large bowl, whisk together juice of ½ lemon, 1 tablespoon olive oil, ¼ teaspoon salt, and pepper as desired, then set dressing aside until Step 6. Use remaining lemon to brighten a glass of water. 

  3. Roll out dough

    Roll out dough

    Sprinkle flour onto a clean, dry surface, coating a rolling pin or your hands with a thin layer. Roll or stretch dough into a rectangular shape, rotating frequently and working from center to edges, until ¼-inch thick. 

  4. Bake pizza crust

    Line a baking sheet with parchment paper and rub with 1 teaspoon olive oil. Add pizza dough, gently stretching to reach edges of baking sheet, and rub all over with 2 teaspoons olive oil. Sprinkle over rosemary and bake until crust is crisp and lightly browned, 15-17 minutes.

  5. Assemble and bake pizza

    While pizza crust bakes, set the table or relax with a glass of wine (a crisp white like Sauvignon Blanc would be delicious). Remove pizza crust from oven and scatter over Fontina. Dollop over ricotta and top with Parmesan. Return pizza to oven and bake until cheeses are melted and slightly golden, 5-8 minutes more.

    While pizza bakes, add arugula to bowl with dressing and toss to coat. Drain figs, pat dry with paper towel, and thinly slice. Arrange figs over pizza, pressing to adhere, then drizzle over balsamic glaze. Cut pizza bianca into slices and serve with arugula salad. Dig in!
