Cooking Steps

  1. Sauté Onion

    Sauté Onion

    Preheat oven to 425°F, and let pizza dough soften at room temperature. Peel onion, halve, and thinly slice. Heat 1½ tablespoons olive oil in a large pan over medium heat. When oil is shimmering, add sliced onion and sauté, stirring occasionally, until softening, about 6 minutes.

  2. Sauté Brussels Sprouts

    Sauté Brussels Sprouts

    Add Brussels sprouts and crushed red pepper (skip or use half for less heat) to pan with onion. Increase heat to medium high and sauté, stirring, until sprouts begin to soften, about 3 minutes. Stir in 1 tablespoon maple syrup to coat, about 1 minute more. Remove pan from heat. Season with ¼ teaspoon salt and black pepper as desired, and set aside. Save remaining maple syrup for pancakes.

  3. Roll Out Dough

    Sprinkle flour onto a clean, dry surface, coating a rolling pin or your hands with a thin layer. Roll or stretch pizza dough into a rectangular shape, rotating frequently and working from center to edges, until ¼-inch thick. Line a baking sheet with parchment paper and rub with 1 teaspoon olive oil. Add pizza dough, gently stretching to reach edges of baking sheet.

  4. Assemble Pizza

    Assemble Pizza

    Rub top of dough with 1 tablespoon olive oil, then sprinkle over goat cheese, Gruyère, and mozzarella, leaving a ½-inch border. Scatter over herbes de Provence and sautéed onion and Brussels sprouts, spreading in an even layer.

  5. Bake Pizza

    Bake Pizza

    Bake pizza until crust is crisp and light golden and cheese is bubbling, 20-25 minutes. This is a great time to set the table (and maybe open some wine?).
