Pizza Bianca with Broccoli Rabe and Caramelized Onions

In our humble opinion, a deliciously crisp pizza crust is the ideal vessel for pretty much anything. So, we came up with this pizza bianca (white pizza), showcasing not one, but three cheeses, in addition to sweet caramelized onion and broccoli rabe, a green veggie much loved in Italy. Melty mozzarella, provolone, and a fluffy topping of ricotta cheese harmonize perfectly with the broccoli rabe, which is sautéed with garlic and red pepper flakes. For a terrific side that stays in the theme of Italian cuisine, there’s an arugula salad. Buon appetito!

Cooking Steps

    Preheat oven to 425°F. Rinse broccoli rabe and trim and discard bottom inch of stems. Slice remainder crosswise into ½-inch pieces. Rinse arugula. Mince garlic. Peel onion, halve, and thinly slice.

  2. Caramelize Onion and Sauté Broccoli Rabe

    Caramelize Onion and Sauté Broccoli Rabe

    Heat butter and 1 tablespoon olive oil in a large pan over medium heat. When butter is foamy, add broccoli rabe and onion, and cook, stirring, until onion is very soft, about 5 minutes. Add brown sugar, crushed red pepper (skip or use half for less heat), and garlic. Cook until onions are caramelized and garlic is fragrant, 2 minutes more. Season with ¼ teaspoon salt and black pepper, remove pan from heat, and set aside. 

  3. Roll Out Dough

    Line a baking sheet with parchment paper and rub 1 teaspoon olive oil onto parchment. Sprinkle flour onto a clean, dry surface. Using a rolling pin or the heels of your hands, roll and stretch pizza dough into a rectangular shape, about ¼-inch thick. Carefully transfer pizza dough to prepared baking sheet.

    Rub ½ tablespoon olive oil on top of dough. Scatter over half of shredded cheese blend, leaving a ½-inch border, then top with broccoli rabe and caramelized onion. Sprinkle over remaining shredded cheese blend

  5. Bake Pizza and Make Dressing

    Bake Pizza and Make Dressing

    Bake pizza bianca until crust is crisp and light golden and cheese is bubbling, 20-25 minutes. Right before pizza has finished baking, in a large bowl, whisk together balsamic vinegar, 2 tablespoons olive oil, ¼ teaspoon salt and black pepper as desired. Add arugula and toss to coat.

  6. Plate Pizza Bianca

    Cut pizza bianca into slices and dollop over ricotta. Serve with arugula salad. Share with a fellow pizza lover and dig in!
