We really didn't think cheeseburgers could get any better—that is, until Chef Michelle created this masterpiece. Mini beef burgers are layered with melty white Cheddar, caramelized Vidalia onion, and tangy mustard, then sandwiched between warm, pillowy brioche buns. Everyone gets three of these bite-size beauties, because we couldn't stop at one if you dared us to.

    Rinse all produce. Slice brioche buns open horizontally, if they arrived whole. Pat mixed lettuces dry with paper towel. Thinly slice radishes into rounds. Peel onion, halve, and thinly slice. In a small bowl, stir together Dijon mustard and whole-grain mustard to combine, then set aside until Step 6.

  2. Caramelize onion

    Caramelize onion

    Heat butter in a large pan over medium-high heat. When butter is foamy, add onion and cook, stirring frequently, until light brown and softened, about 6 minutes. Add ¼ cup water and cook, stirring, until onion is golden and water has evaporated, 4-5 minutes more. Transfer caramelized onions to a medium bowl, reserving pan.

  3. Form sliders

    While onion cooks, in a large bowl, combine Worcestershire, ½ teaspoon salt, and pepper as desired. Pat beef dry with paper towel and add to bowl with seasoning. Using your hands, mix well, then form into 6 equal patties, about 1½ inches thick. Using your thumb, create a dimple on top of each. Set aside until Step 5.

  4. Make salad

    In a separate large bowl (big enough for the salad), whisk together sherry vinegar, ½ packet honey (save remainder to sweeten a cup of tea), and 2 tablespoons olive oil until fully combined. Season with ¼ teaspoon salt and pepper as desired. Add mixed lettuces and radishes to bowl with vinaigrette, waiting to toss until ready to serve (to keep salad crisp).

  5. Cook sliders

    Cook sliders

    Return pan from onion to medium-high heat with 1 teaspoon olive oil. When oil is shimmering, add sliders and sear, without flipping, until browned on bottom, 3-4 minutes. Flip and top sliders with caramelized onions, then white Cheddar. Cover pan and cook until cheese is melted and sliders are medium rare, 1-2 minutes more. Transfer sliders to a plate. Rinse pan and wipe clean for the next step.

  6. Plate brioche sliders

    Return pan from sliders to medium-high heat and add brioche buns cut-side down. Toast until light golden, about 2 minutes. Divide toasted buns between serving plates and spread with mustard mixture. Toss salad to coat, then add to plates. Sandwich white Cheddar cheeseburger sliders between buns and dig in!
