Tiramisu or cheesecake? Chef Giuseppe solves the crucial dessert decision by combining both in one delectable dessert. The cream cheese and whipped cream filling is laced with espresso and vanilla, then topped with dark chocolate and a dusting of cocoa. Individual graham cracker crusts mean everyone gets their own cheesecake—no need to share.

    Cooking Steps

    1. Prepare ingredients

      Prepare ingredients

Place a large bowl and whisk in the refrigerator—chilled tools make whipping cream easier (if you have a stand or hand mixer, feel free to chill just the bowl). Finely chop dark chocolate.

    2. Make cheesecake filling

      Make cheesecake filling

In a separate large bowl, whisk together half of espresso powder (use remainder in another recipe, like a chili or steak rub) and 1 teaspoon water to dissolve. Add cream cheese, powdered sugar, vanilla extract, and a pinch of salt to bowl with espresso and whisk until thoroughly combined.

    3. Whip cream

      Whip cream

Remove bowl and whisk from refrigerator, add heavy cream, and whip until thickened and soft peaks form. Add whipped cream to bowl with cream cheese mixture and gently fold together to combine.

    4. Finish cheesecakes

      Finish cheesecakes

Spoon cream cheese mixture into graham cracker crusts, dividing evenly. Lightly tap each crust on a flat surface to allow filling to settle and remove any air bubbles. Refrigerate until firm, about 20 minutes.

    5. Plate tiramisu cheesecakes

      Plate tiramisu cheesecakes

While cheesecakes chill, use the downtime to get ahead on dishes. Using a fine-mesh sieve or spoon, dust cheesecakes with cocoa powder. Garnish with dark chocolate. Open a special, dessert-friendly beer and enjoy!
