      Place a large bowl and whisk in the refrigerator—chilled tools make whipping cream easier (if you have a stand or hand mixer, feel free to chill just the bowl). Finely chop dark chocolate.

    2. Make cheesecake filling

      In a separate large bowl, whisk together half of espresso powder (use remainder in another recipe, like a chili or steak rub) and 1 teaspoon water to dissolve. Add cream cheese, powdered sugar, vanilla extract, and a pinch of salt to bowl with espresso and whisk until thoroughly combined.

    3. Whip cream

      Whip cream

      Remove bowl and whisk from refrigerator, add heavy cream, and whip until thickened and soft peaks form. Add whipped cream to bowl with cream cheese mixture and gently fold together to combine.

    4. Finish cheesecakes

      Spoon cream cheese mixture into graham cracker crusts, dividing evenly. Lightly tap each crust on a flat surface to allow filling to settle and remove any air bubbles. Refrigerate until firm, about 20 minutes.
