Turkey Shepherd’s Pie with Sweet Potato and Peas

Chef Andrea’s got a knack for lightening up the flavors of super-comforting, homestyle dishes without sacrificing any of the comfort. This week, she takes on shepherd’s pie, swapping out the traditional lamb for turkey. It’s browned with a blend of aromatic spices, carrots, and onions, then transformed into a rich, gravy-like filling with Worcestershire sauce, peas, corn, and chicken stock. Rather than the traditional mashed potato layer, our version uses mashed sweet potato to provide a creamy and colorful topping.

    Prepare ingredients

    Preheat oven to 450°F. Rinse sweet potatoes, peel, and cut into 1-inch cubes. Roughly chop carrots (they're already shredded, but we want even smaller pieces for quicker cooking and tender texture). Rinse scallions, trim and discard roots, and thinly slice, keeping whites and light greens separate from dark greens. Reshape aluminum tin, if bent.

  2. Roast potatoes and sauté aromatics

    Roast potatoes and sauté aromatics

    On a baking sheet, toss sweet potatoes with ½ tablespoon olive oil and ¼ teaspoon salt. Bake until tender, 12-15 minutes. Meanwhile, heat 1 tablespoon olive oil in a medium high-sided pan over medium heat. When oil is shimmering, add carrots and scallion whites and light greens. Cook, stirring occasionally, until soft, 5-6 minutes. Add spice mix and cook until fragrant, 1 minute more.

  3. Mash sweet potatoes

    Mash sweet potatoes

    Once roasted, transfer sweet potatoes to a large bowl and add ¼ cup heavy cream. Save remaining cream for your morning coffee. Using a potato masher or fork, mash until smooth. Taste and add salt and pepper as desired. Set mashed sweet potatoes aside for Step 6, reserving baking sheet. Increase oven temperature to 500°F.

  4. Brown turkey

    Increase heat under pan with aromatics to medium high and add turkey. Season with ½ teaspoon salt and pepper as desired. Cook, breaking up, until browned, about 5 minutes. 

  5. Make turkey filling

    Add flour to pan with turkey, still over medium-high heat. Cook, stirring, until flour is no longer visible, about 1 minute. Add Worcestershire sauce, peas, corn, and chicken stock and cook, stirring, until thickened, 4-5 minutes more. Transfer turkey filling to tin, spreading in an even layer. Place tin on reserved baking sheet.

  6. Bake and plate shepherd's pie

    Spread mashed sweet potatoes over turkey in an even layer. Transfer baking sheet to oven and bake until sweet potato topping is golden and forms a crust, 10-15 minutes. Use any remaining downtime to set the table. Transfer turkey shepherd's pie to serving plates, garnish with scallion dark greens, and enjoy!
