The flaky, buttery pastries are easily customized; here, we’re stuffing them with seasonal butternut squash, mozzarella, and Monterey Jack, then baking them until crisp and gooey. Warm, sweet, and spicy tomato sauce is perfect for dipping or drizzling, and spinach tossed in honey-lime vinaigrette makes for the perfect bright side salad.

    Preheat oven to 450ºF. Rinse all produce. Halve tomatoes. Cut squash cubes to ¼-inch pieces, if needed. Finely chop oregano leaves to yield 1 teaspoon, discarding stems. Halve lime. Mince garlic. Peel onion, halve, and thinly slice. Halve jalapeño lengthwise. Using a knife tip, discard seeds and stem. Mince up to half of pepper. Line a baking sheet with parchment paper. Set aside for Step 3.

  2. Make Squash Filling

    Heat 1 tablespoon olive oil in a medium high-sided pan over medium heat. When oil is shimmering, add cumin, chopped oregano, half of garlic, and half of onion. Sauté, stirring, until softened, 3-4 minutes. Increase heat to medium high and add squash. Cook, stirring, until squash is tender, 5 minutes. Add 2 tablespoons water and cook until mostly evaporated, 3 minutes. Season with ¼ teaspoon salt and pepper. Remove pan from heat.

  3. Form and Bake Empanadas

    Arrange empanada doughs on prepared baking sheet in a single layer. Working 1 at a time, spoon ¼ cup filling onto 1 half of each dough. Reserve pan for making salsa. Sprinkle over Monterey Jack and mozzarella. Carefully fold dough over filling. Using the tines of a fork, press and seal edges tightly. Cut a small slit on top of empanadas. Bake until puffed and light golden, 13-15 minutes. Set aside to cool.

  4. Make Salsa Roja

    While empanadas bake, wipe pan from filling clean and add 1 tablespoon olive oil over medium heat. When oil is shimmering, add remaining garlic, remaining onion, and minced jalapeño (skip or use half for less heat). Sauté until softened, 5 minutes. Add tomatoes. Cook, breaking up, until thickened, 5-7 minutes. Season with ¼ teaspoon salt. Remove pan from heat. Stir in ½ packet honey (save remainder for the next step).

  5. Make Spinach Salad

    Make Spinach Salad

    While tomatoes cook, in a large bowl, whisk together juice of ½ lime, remaining honey, and 1 tablespoon olive oil until fully combined. Season with ⅛ teaspoon salt and pepper as desired. Pat spinach dry with paper towel and add to bowl with dressing. Toss to coat. Save remaining lime to brighten a glass of water.

  6. Plate Empanadas

    Plate Empanadas

    Transfer butternut squash empanadas and spinach salad to serving plates. Spoon over salsa roja or serve alongside for dipping. Enjoy your homemade masterpiece!
