Spinach-Artichoke Hand Pies with Roasted Butternut Squash Salad

Chef Michelle adores the flavor combination in spinach and artichoke dip, and when inspiration struck to use it as a filling for flaky pastries, we were completely on board. Stuffed with marinated artichokes, sun-dried tomatoes, and mozzarella, the handheld pies are baked until perfectly golden and flaky for a supremely comforting dinner. To add to the fun, we’re sharing some tips for eager kitchen helpers to get in on the fun, even if they’re not super-familiar with cooking (or good with hot pans). We swear the good company makes the meal even more delicious.

Cooking Steps

  1. Prepare ingredients

    Prepare ingredients

    Preheat oven to 450ºF. Rinse all produce. Cut butternut squash cubes to ½-inch pieces, if needed. Finely chop parsley leaves, discarding stems. Halve lemon. Roughly chop sun-dried tomatoes. Drain artichokes and roughly chop. Mince garlic. Peel shallot and thinly slice. Line a baking sheet with parchment paper and set aside. Reserve 1 handful spinach and set aside for Step 6.

  2. Make filling

    Heat 1 tablespoon olive oil in a medium pan over medium-high heat. When oil is shimmering, add garlic and shallot and cook until softened, about 3 minutes. Add remaining spinach (not reserved handful) and cook until wilted, 1-2 minutes more. 

  3. Finish filling

    Reduce heat under pan with spinach to medium, then add red wine vinegar, crushed red pepper (skip or use half for less heat), juice of ½ lemon, sun-dried tomatoes, artichokes, half of parsley, and ¼ teaspoon salt. Stir to combine and warm through, 1-2 minutes. Remove from heat and stir in mozzarella until fully combined. 

  4. Form hand pies and prepare squash

    Arrange doughs on prepared baking sheet in a single layer. Spoon filling onto 1 half of each dough, dividing evenly. Carefully fold dough over filling and, using the tines of a fork, press and seal edges tightly. Cut a small slit on top of hand pies to allow steam to escape. On a separate baking sheet, toss butternut squash with 1 tablespoon olive oil, ½ teaspoon salt, and black pepper.

  5. Bake hand pies and squash

    Transfer both baking sheets to oven. Bake until squash is tender and beginning to brown, and hand pies are puffed and light golden brown, 13-15 minutes. Use any remaining downtime to get a head start on dishes!

    Once roasted, add reserved handful spinach to baking sheet with butternut squash and toss to combine. Squeeze over juice of remaining lemon and garnish with remaining parsley. Serve spinach-artichoke hand pies with roasted butternut squash salad. Dig in!
