Spicy Sausage Ragù with Roasted Gnocchi and Burrata

The time it takes to wait for a big pot of water to boil, making sure it doesn't all stick together, and dealing with draining (including the funny yet sort of odd sensation of a steamy pasta facial). Here, she's roasting gnocchi on a sheet tray for guaranteed crispiness, then ladling over a spicy sausage and tomato sauce. On top of that, creamy burrata cheese is tossed with aromatic basil for a super-summery touch.

Cooking Steps

  1. Prepare ingredients

    Prepare ingredients

    Preheat oven to 450°F. Rinse all produce. Finely chop basil leaves, discarding stems. Halve mini peppers lengthwise, discarding seeds and stems, then roughly chop. Peel onion, halve, and thinly slice. Mince garlic.

  2. Roast gnocchi

    Roast gnocchi

    Using your hands, gently separate gnocchi, then place in a large bowl. Add mini peppers, onion, 1½ tablespoons olive oil, ½ teaspoon salt, and black pepper as desired, and toss to coat. Transfer to a baking sheet, arranging in a single layer; reserve bowl for Step 5. Roast until peppers and onions are tender and gnocchi is crisp and beginning to brown, 18-20 minutes.

  3. Cook sausage

    Cook sausage

    While gnocchi roast, heat 2 teaspoons olive oil in a large high-sided pan over medium-high heat. When oil is shimmering, add sausage and garlic and cook, breaking up meat, until browned, 4-5 minutes.

  4. Make sausage ragù

    Make sausage ragù

    To pan with sausage, still over medium-high heat, add marinara sauce, ½ teaspoon salt, and black pepper as desired. Cook, stirring occasionally, until sauce is thickened, 4-5 minutes. Remove pan from heat, stir in half of basil, and set aside.

  5. Season burrata

    Season burrata

    Remove burrata from container, discarding excess liquid. Tear burrata into bite-size pieces and place in bowl from gnocchi. Toss with remaining basil, 2 teaspoons olive oil, ⅛ teaspoon salt, and black pepper as desired.

  6. Plate gnocchi

    Plate gnocchi

    Divide roasted gnocchi, peppers, and onions between serving plates. Spoon over spicy sausage ragù, then top with basil burrata. Mangia!
