Cooking Steps

  1. Prepare sweet potatoes

    Prepare sweet potatoes

    Rinse all produce. Trim and discard scallion root and thinly slice, keeping whites and light greens separate from dark greens. Using the large holes of a box grater, grate sweet potatoes; alternatively, finely chop. In a large bowl, combine rice flour, grated sweet potatoes, scallion whites and light greens, 3 tablespoons water, ¾ teaspoon salt, and pepper as desired. Mix well until beginning to stick together.

  2. Fry sweet potato fritters

    Fry sweet potato fritters

    In a large nonstick pan, heat enough canola oil to reach about ¼ inch up sides of pan over medium-high heat. When oil is shimmering, add ¼ cup sweet potato mixture, working in batches as needed to leave enough room for browning, and gently press with a spoon or spatula to flatten. Fry until golden, 3-4 minutes per side. Transfer sweet potato fritters to a paper towel–lined plate to drain.

  3. Cook duck

    Cook duck

    Mince garlic. Heat ½ tablespoon canola oil in a medium pan over medium-high heat. When oil is shimmering, add garlic and cook, stirring, until fragrant, 1 minute. Add duck and cook, breaking up meat, until beginning to brown, about 5 minutes. Stir in soy sauce and half of brown sugar; cook until flavors have melded, about 1 minute more. Season with ¼ teaspoon salt and pepper as desired.

  4. Make creamy ginger slaw

    Make creamy ginger slaw

    While duck cooks, roughly chop pickled ginger. In a medium bowl, whisk together mayonnaise, sesame oil, chopped pickled ginger, remaining brown sugar, and ¼ teaspoon salt to combine. Add slaw mix and toss to coat.

  5. Plate soy-glazed duck

    Transfer sweet potato fritters to serving plates. Top with soy-glazed duck, then creamy ginger slaw. Garnish with scallion dark greens and dig in!
