The thought of seared meats always makes our mouths water, but with the addition of a savory pan sauce or gravy, we just can’t stay away. Here, Chef Andrea is seasoning pork chops with aromatic herbs and spices, then smothering them in a decadent caramelized Vidalia onion gravy made with garlic, brown sugar, Worcestershire sauce, lemon, and a splash of heavy cream for richness. It’s paired with crispy roasted potatoes and tender broccolini, both satisfying on their own but even better when combined in a bite with a drizzle of the sauce.

Cooking Steps

  1. Sear Pork Chops

    Sear Pork Chops

    Preheat oven to 450°F. Pat pork chops dry with paper towel and season all over with spice mix, ½ teaspoon salt, and pepper as desired. Heat 1 tablespoon olive oil in a medium pan over medium-high heat. When oil is shimmering, add pork chops and sear until browned and cooked through, 3-5 minutes per side. Transfer pork chops to a plate, leaving behind juices in pan for Step 3, and set aside to rest.

    While pork cooks, rinse potatoes and cut into 1-inch cubes. Rinse broccolini, trim and discard woody bottoms, and cut lengthwise into 1-inch florets with long stems—halve lengthwise again through thicker stems as needed. Halve lemon. Peel onion, halve, and thinly slice. Mince garlic

    Cook Potatoes and Onion

    On a baking sheet, toss potatoes with 1 tablespoon olive oil, ¼ teaspoon salt, and pepper. Roast until beginning to soften, about 10 minutes. Meanwhile, return pan from pork to medium-high heat and add butter. When butter is foamy, add onion. Cook, stirring frequently, until brown, 8-10 minutes. Add garlic and cook until fragrant, 1-2 minutes. Remove from heat and set aside for Step 5.

  4. Finish Vegetables

    After 10 minutes of potatoes roasting, remove from oven and push to 1 half of baking sheet. On other half of baking sheet, toss broccolini with 1 tablespoon olive oil, ¼ teaspoon salt, and pepper. Arrange in a single layer. Return baking sheet to oven and roast until vegetables are tender and beginning to brown, 5-7 minutes more.

  5. Finish Gravy

    Finish Gravy

    Add brown sugar and Worcestershire sauce to pan with onion. Cook, stirring, until sugar is dissolved, 1 minute. Season with ¼ teaspoon salt and pepper. Add chicken stock and increase heat to high. Bring to a boil, then reduce heat to medium high and cook until liquid is reduced by half, 8 minutes. Season with ¼ teaspoon salt and pepper and remove from heat. Add cream and juice of ½ lemon. Stir to combine.

  6. Finish and Plate Pork Chop

    Finish and Plate Pork Chop

    Return pan with gravy to medium-high heat and add seared pork chops. Cook until warmed through, 1-2 minutes more. Transfer pork chops to serving plates and spoon over caramelized onion gravy. Serve smothered pork chop alongside broccolini and crispy potatoes. Dig in!
