Prepare IngredientsHalve lemon. Rinse remaining produce. Roughly chop tomatoes. Halve onion and slice one half as thinly as possible. Break bagel chips into bite-size pieces. Save remaining onion for your morning omelette.
Make Sesame-Poppy ViniagretteIn a large bowl, whisk together Dijon mustard, half of honey, and juice of 1 lemon. While whisking, slowly add 1 tablespoon olive oil until emulsified. Add spice mix and stir to combine. Season with ⅛ teaspoon salt and pepper as desired. Use remaining honey to sweeten a cup of tea.
Toss SaladAdd lettuces, tomatoes, and red onion to bowl with sesame-poppy vinaigrette. Toss to combine and set aside.
Prepare Smoked SalmonTear salmon into bite-size pieces.
Plate SaladDivide salad evenly between 2 plates and top with smoked salmon.
