Cooking Steps

  1. Prepare pizza dough

    Prepare pizza dough

    Preheat oven to 425ºF. Remove pizza dough from bag and let soften at room temperature. Line a baking sheet with parchment paper.

  2. Stretch and bake crust

    Stretch and bake crust

    Sprinkle flour onto a clean, dry surface, coating a rolling pin or your hands with a thin layer. Roll or stretch dough into a rectangular shape, rotating frequently and working from center to edges, until ¼-inch thick. Add pizza dough to prepared baking sheet and rub with 2 teaspoons olive oil. Sprinkle poppy seeds in a 1-inch border on dough. Bake until crust is crisp and golden, 13-17 minutes.

  3. Prepare remaining ingredients

    While flatbread bakes, rinse all produce. Pat arugula dry with a paper towel. Pick dill leaves, discarding stems. Thinly slice chives. Halve tomatoes. Halve lemon. Thinly slice half of cucumber into rounds (save remainder for a snack).

  4. Make lemon-chive mascarpone

    Make lemon-chive mascarpone

    In a small bowl, stir together mascarpone, half of chives, juice of ½ lemon, ¼ teaspoon salt, and pepper as desired to combine. Set aside until Step 6.

  5. Make salad

    In a large bowl, whisk together juice of remaining lemon, 1½ tablespoons olive oil, ¼ teaspoon salt, and pepper as desired to combine. Add arugula, cucumber, tomatoes, and remaining chives—wait to toss until ready to serve, so salad stays crisp.

  6. Plate smoked salmon pizza

    Plate smoked salmon pizza

    Once baked, allow crust to cool for at least 5 minutes. Then, spread with lemon-chive mascarpone, preserving poppy seed border. Top with arugula salad. Tear smoked salmon into large pieces and arrange on top, then garnish with dill. Cut smoked salmon pizza into slices and dig in!
