Cheeseburger Pretzel Sliders with Dijon Mustard and Caramelized Onions

Slice pretzel buns open horizontally. Rinse lettuce and pat dry with paper towel. Rinse radishes and thinly slice crosswise. Peel onion, halve, and thinly slice. Tear each Cheddar slice into 3 pieces. In a small bowl, stir together Dijon mustard and whole-grain mustard to combine, then set aside.
Heat butter in a large pan over medium-high heat. When butter is foamy, add onion and ¼ teaspoon salt. Cook, stirring occasionally, until light brown and softened, about 6 minutes. Add 1 tablespoon water and reduce heat to medium. Cook, stirring continuously, until golden brown and soft, 5 minutes more. Transfer caramelized onions to a bowl and cover with foil to keep warm. Wipe pan clean and reserve for Step 5.
While onion cooks, pat beef dry with paper towel and place in a large bowl. Add Worcestershire sauce, ½ teaspoon salt, and pepper as desired. Using your hands, mix well, then form into 6 equal patties, about 1½-inches thick. Using your thumb, create a dimple on top of each. Transfer to a plate and set aside until Step 5.
In a large bowl, whisk together sherry vinegar, ½ packet honey (save remainder to sweeten a cup of tea), and 2 tablespoons olive oil until fully combined. Season with ¼ teaspoon salt and pepper as desired. Add lettuce and radishes to bowl with vinaigrette, waiting to toss until Step 6 (this will prevent your salad from becoming soggy).
Return pan from onions to medium heat with 1 teaspoon olive oil. When oil is shimmering, add sliders and sear, without flipping, until browned on bottom, 3-4 minutes. Flip and continue searing until browned and medium rare, 2-3 minutes. Top sliders with caramelized onions and Cheddar, then cover pan to melt cheese, 1-2 minutes more. Transfer sliders to a plate. Wipe pan clean for the next step.
Plate Pretzel Sliders
Return pan from sliders to medium heat and arrange pretzel buns cut-side down. Toast until light golden, about 2 minutes. Spread mustard over cut-sides of buns. Toss salad to coat. Sandwich cheeseburger sliders between pretzel buns and serve with salad. Dig in!
