Cooking Steps

  1. Cook shrimp

    Cook shrimp

    Bring a medium pot of water to a boil over high heat. Pat shrimp dry with paper towel; season with ¼ teaspoon salt and pepper. Heat 2 teaspoons olive oil in a medium pan over medium-high heat. When oil is shimmering, add shrimp and cook, stirring occasionally, until opaque and just pink, 4-6 minutes total. Using a slotted spoon, transfer shrimp to a paper towel–lined plate to drain. Wipe pan clean and reserve, off heat, for Step 4.


  2. Prepare ingredients

    Prepare ingredients

    While shrimp cook, rinse scallion. Trim and discard scallion root and thinly slice crosswise on a diagonal, keeping whites and light greens separate from dark greens.

  3. Cook gemelli and peas

    Cook gemelli and peas

    Season boiling water generously with salt. Stir in gemelli and cook 6 minutes. Then, add peas and cook until pasta is al dente and peas are tender, 1 minute more. Reserve ½ cup pasta cooking water (it's easiest to reserve in a liquid measuring cup, if you have one). Then, drain gemelli and peas and return to pot, off heat.

  4. Make Mornay sauce

    Make Mornay sauce

    Return pan from shrimp to medium-high heat with 2 tablespoons olive oil. When oil is shimmering, add scallion whites and light greens and sauté, stirring occasionally, until aromatic, 1 minute. Add flour and cook, stirring, until lightly browned, 1 minute. Whisking continuously, add milk and cook until thickened, 2 minutes more. Remove pan from heat. Whisk in white Cheddar to melt. Season with pepper as desired.


  5. Finish mac and cheese

    Finish mac and cheese

    Transfer Mornay sauce to pot with gemelli and peas. Adding 2 tablespoons at a time, stir in reserved pasta cooking water until sauce is silky and clings to pasta. Add shrimp to pot with pasta and toss to coat. Taste and add salt and pepper as desired.


  6. Plate shrimp mac and cheese

    Plate shrimp mac and cheese

    Divide shrimp mac and cheese between serving bowls. Garnish with everything bagel spice mix and scallion dark greens. Dig in!
