    Prepare ingredients

    Preheat oven to 450°F. Rinse all produce. Unwrap butter packets, place in a small bowl, and set aside to soften at room temperature (we recommend at least 10 minutes). Halve potatoes lengthwise; cut lengthwise into ¼-inch slices, then cut lengthwise again into ¼-inch fries. Place whole garlic clove on a small piece of foil; drizzle over ½ teaspoon olive oil. Bring edges of foil together and seal to form a pouch. Line a baking sheet with parchment paper.

  2. Bake fries and roast garlic

    On prepared baking sheet, toss fries with 1 tablespoon olive oil, ½ teaspoon salt, and pepper as desired. Arrange in a single layer. Place foil pouch with garlic alongside fries on baking sheet. Bake until fries are browned and tender and garlic is golden and soft, 20-25 minutes (move on to the next step, but don't forget to come back!). Then, sprinkle truffle zest over fries and toss to coat.

  3. Sear steak

    While fries bake, pat steaks dry with paper towel and season all over with ½ teaspoon salt and pepper as desired. Heat ½ tablespoon olive oil in a medium pan over medium-high heat. When oil is shimmering, add steaks to pan and sear until browned and medium rare, 4-6 minutes per side. Transfer steaks to a plate and set aside to rest.

  4. Make salad

    While steaks sear, halve tomatoes. In a medium bowl, whisk together Champagne vinegar, 2 teaspoons olive oil, ⅛ teaspoon salt, and pepper as desired to combine. Pat arugula dry with paper towel, then add to bowl with dressing, along with tomatoes, waiting to toss until ready to serve.

  5. Make roasted garlic butter

    To bowl with softened butter, add roasted garlic, ¼ teaspoon salt, and pepper as desired. Using a fork, mash until garlic is broken down and butter is fully combined. Set aside for serving.

  6. Plate seared steak

    Once rested, cut steaks against the grain into ¼-inch slices. Transfer steak to serving plates and dollop with roasted garlic butter. Toss arugula and tomatoes and serve with steaks, along with truffle fries. Dig in!
