Cooking Steps

  1. Prepare ingredients

    Prepare ingredients

    Rinse all produce. Trim and discard watercress stems. Thinly slice chives. Halve lemon. Roughly chop capers. Trim and discard scallion roots and thinly slice. 

  2. Form salmon burgers

    Form salmon burgers

    In a medium bowl, combine salmon, mustard, horseradish, breadcrumbs, capers, and scallions. Season with ½ teaspoon salt and pepper as desired. Using your hands, mix well, then form into 2 equal patties, about 1-inch thick. Transfer to a plate, cover with plastic wrap, and chill in refrigerator until firm, 5-10 minutes.

  3. Make vinaigrette and aioli

    Make vinaigrette and aioli

    While burgers chill, in a large bowl, whisk together red wine vinegar, 1½ tablespoons olive oil, ⅛ teaspoon salt, and pepper as desired, then set aside until Step 6. In a small bowl, whisk together mayonnaise, chives, juice of ½ lemon, ⅛ teaspoon salt, and pepper as desired (use remaining lemon to brighten a glass of water). Set chive aioli aside until ready to serve. 

  4. Toast buns

    Slice buns open horizontally, if they arrived whole, and place cut-side down in a large nonstick pan over medium heat. Toast until light golden and warmed through, 2-3 minutes. Transfer to serving plates, reserving pan for next step.

  5. Sear salmon burgers

    Sear salmon burgers

    Return pan from buns to medium heat and add 1 tablespoon olive oil. When oil is shimmering, add burgers and sear until cooked through and opaque, 4-5 minutes per side (or when a thin knife inserted into the burger meets no resistance). 

  6. Plate salmon burgers

    Plate salmon burgers

    While burgers cook, add spring mix and watercress to bowl with vinaigrette and toss to coat. Layer bun bottoms with salmon burgers, then top with chive aioli. Finish with bun tops and serve with watercress salad. Dig in!
