Preheat oven to 500°F. Place heavy cream in a medium heatproof bowl and microwave in 20-second intervals until hot and small bubbles form on surface.
Add dark chocolate to bowl with warm heavy cream. Allow to stand for about 1 minute—this helps the chocolate warm through for gentle melting. Gently stir until fully combined and smooth.
Assemble s'mores pies
Place graham cracker crusts on a baking sheet (this helps stabilize them for easy transfer to the oven, and even baking). Fill with chocolate ganache, dividing evenly. Top with mini marshmallows.
Bake and plate s'mores pies
Bake s'mores pies until marshmallows are toasted and slightly golden, 1-2 minutes. Set aside to cool for a few minutes before serving. Now, imagine you're sitting by a campfire...
