Warm cream
Preheat oven to 500°F. Place ⅓ cup heavy cream in a medium heatproof bowl and microwave in 20-second intervals until hot and small bubbles form on surface. Save remaining cream for your morning coffee.
Make ganache
Add dark chocolate to bowl with warm heavy cream. Allow to stand for about 1 minute (this helps the chocolate warm through for gentle melting). Gently stir until fully combined and smooth.
Assemble s'mores pies
Place graham-cracker crusts on a baking sheet. Spoon chocolate ganache into graham-cracker crusts, dividing evenly. Top with mini marshmallows.
