    Cooking Steps

      Preheat oven to 300°F. Place cream cheese in a medium bowl and set aside to soften at room temperature, 5-10 minutes. Place graham-cracker crusts on a baking sheet, then set aside until Step 3.

    2. Make Cheesecake Filling

      Add granulated sugar, 1 egg, and a pinch of salt to bowl with softened cream cheese, then whisk until smooth. Add pumpkin purée and spice mix and whisk vigorously until fully combined and no lumps remain.

    3. Bake Cheesecakes

      Pour cheesecake filling into graham-cracker crusts, dividing evenly. Transfer baking sheet to oven and bake until centers are set, 25-30 minutes.

    4. Whip Cream

      While cheesecakes bake, in a large bowl, combine heavy cream and powdered sugar and whisk until thickened and soft peaks form. Chill whipped cream in refrigerator until ready to serve.

      Once baked, remove cheesecakes from baking sheet and chill in freezer until cold to the touch, at least 20 minutes. Enjoy pumpkin cheesecakes with dollops of whipped cream—because life is sweet.
