    Cooking Steps

    1. Prepare Ingredients

      Prepare Ingredients

      Preheat oven to 425ºF. Let pizza dough soften at room temperature (the longer you let it sit at room temperature, the easier it’ll be to roll out—we recommend at least 15 minutes). Rinse chives and thinly slice. Peel onion, halve, and thinly slice. In a small bowl, whisk together mustard, honey, and apple cider vinegar until fully combined. 

    2. Cook Chicken

      Pat chicken dry with paper towel. Season all over with spice mix, ½ teaspoon salt, and pepper as desired. Heat 1 tablespoon olive oil in a medium pan over medium heat. When oil is shimmering, add chicken and sear until cooked through and no longer pink, 5-6 minutes per side. Transfer to a plate and set aside to rest, reserving pan.

    3. Roll Pizza Dough

      While chicken cooks, sprinkle flour onto a clean, dry surface, coating a rolling pin or your hands with a thin layer. Roll or stretch pizza dough into a rectangular shape, rotating frequently and working from center to edges, until ¼-inch thick. Line a baking sheet with parchment paper and rub with 1 teaspoon olive oil. Add pizza dough, gently stretching to reach edges of baking sheet.

      Rub 1 tablespoon olive oil on top of dough. Sprinkle over Cheddar and mozzarella, leaving a ½-inch border. Bake until crust is crisp and light golden and cheese is bubbling, 15 minutes. 

    5. Sauté Onion and Chicken

      Sauté Onion and Chicken

      While pizza bakes, return pan from chicken to medium heat with ½ tablespoon olive oil. When oil is shimmering, add onion and sauté until soft and translucent, about 5 minutes. Meanwhile, roughly chop chicken into bite-size pieces or shred using 2 forks. Once onions are soft, add chicken to pan over medium heat and pour over honey mustard sauce. Cook, stirring, to coat, about 30 seconds.

    6. Finish Pizza

      Finish Pizza

      Remove pizza from oven and scatter over chicken and onions in an even layer. Return to oven and bake until toppings are warmed through and crust is golden brown, about 2 minutes more. Remove pizza from oven and dollop over ricotta. Garnish with chives, cut into slices, and dig in!
