      Prepare Ingredients

      Preheat oven to 425°F. Rinse all produce. Cut tomatoes into ½-inch dice. Finely chop ¼ of diced tomatoes, leaving remaining tomatoes in ½-inch dice for making meatballs. Quarter cucumber lengthwise, then cut crosswise into ½-inch pieces. Roughly chop parsley leaves, discarding stems. Halve lemon. Peel onion and cut into small dice.

      In a large bowl, combine spice mix, breadcrumbs, finely chopped tomato, 1 tablespoon onion, 1 egg, ½ teaspoon salt, and pepper. Add pork to bowl with aromatics. Using your hands, mix well, then form into 10 equal balls, about 2 inches thick. Arrange meatballs on a foil-lined baking sheet, spacing apart as much as possible, and bake until cooked through and slightly browned, about 15 minutes.

      In a medium bowl, whisk together juice of ½ lemon, 1 tablespoon olive oil, ¼ teaspoon salt, and pepper to combine. Add feta, cucumber, remaining diced tomato, half of parsley, and remaining onion (raw red onion has a strong flavor, so only use as much as desired). Toss to combine and set aside to marinate until ready to serve. Use remaining lemon to brighten a glass of water.

    4. Make Dough

      Reserve 1 teaspoon flour in a small bowl and set aside. In a separate medium bowl, combine baking powder, ⅓ cup milk, remaining flour, remaining parsley, and ⅛ teaspoon salt. Stir vigorously until fully combined and a dough begins to form. Sprinkle reserved flour onto a clean dry surface. Turn out dough and, using your hands, knead until soft and pliable, 2-3 minutes. Divide dough into 2 equal pieces.


    5. Cook Flatbreads

      Using a rolling pin or your hands, roll and stretch doughs into circular shapes, about ¼-inch thick. Heat 2 tablespoons olive oil in a large nonstick pan over medium-high heat. When oil is shimmering, add doughs, 1 disc at a time. Cook, working in batches and adding oil as needed, until golden, 3-4 minutes. Flip, reduce heat to medium, and cook until dough is cooked through, 3-4 minutes more.
