Soba noodles are Japanese noodles made from buckwheat flour, and we love them for their delicate texture and nutty flavor. Here, we toss them with shredded chicken and a classic peanut sauce with soy, brown sugar, sesame oil, ginger, garlic, and lime. Edamame, carrots, and cabbage add color, while peanuts add crunch. It's all served with extra lime for squeezing over each plate.

Cooking Steps

  1. Cook chicken

    Cook chicken

    Bring a medium pot of water to a boil over high heat. Pat chicken dry with paper towel and season all over with ½ teaspoon salt and pepper as desired. Heat 2 teaspoons canola oil in a medium pan over medium-high heat. When oil is shimmering, add chicken and sear until cooked through and no longer pink, 5-7 minutes per side. Transfer chicken to a plate and set aside to rest.

  2. Prepare ingredients

    While chicken cooks, rinse all produce. Halve lime; cut 1 half into wedges for serving. Roughly chop peanuts, or leave in bag and gently crush with the bottom of a heavy pan. Trim and discard skin of ginger. Mince garlic and ginger; combine on cutting board and sprinkle over ⅛ teaspoon salt. Using a large knife, carefully scrape over mixture at a 45° angle, pressing down. Repeat until garlic and ginger are broken down and a paste forms.

  3. Cook soba noodles

    Cook soba noodles

    Add soba noodles to boiling water. Cook, stirring occasionally to prevent sticking, until tender but still chewy, 5-7 minutes. Drain and rinse under cold water for 30 seconds to stop cooking. Set soba noodles aside for Step 5.

  4. Make peanut sauce

    Make peanut sauce

    While soba noodles cook, place peanut butter packets between your palms for 1-2 minutes—the heat from your hands will help it soften. In a large bowl, whisk together soy sauce, brown sugar, sesame oil, garlic-ginger paste, peanut butter, juice of ½ lime, 2 teaspoons canola oil, and 2 tablespoons warm water until smooth.

  5. Shred chicken

    Shred rested chicken using 2 forks or roughly chop. To bowl with peanut sauce, add slaw mix, edamame, shredded chicken, soba noodles, and half of peanuts. Toss to coat, then taste and add salt and pepper as desired.

    Divide soba noodles between serving plates. Garnish with remaining peanuts. Serve with lime wedges for squeezing over. Enjoy!
