Cooking Steps

  1. Pound chicken

    Pound chicken

    Preheat oven to 450ºF. Line a baking sheet with foil for the next step. Pat chicken dry with paper towel and place between 2 large pieces plastic wrap. Using a meat mallet or heavy pan, pound to ¼-inch thickness. Transfer chicken to a large bowl.

  2. Crust chicken

    Crust chicken

    Reserve 1 tablespoon Parmesan in a separate large bowl for Step 4. Place remaining Parmesan in a small bowl, then stir in spice mix, breadcrumbs, and 1 tablespoon olive oil to combine. To bowl with chicken, add mustard, 1 tablespoon olive oil, ½ teaspoon salt, and pepper; turn to coat. Arrange chicken in a single layer on prepared sheet and top with Parmesan breadcrumbs, pressing to adhere (grab a friend to help with this part). 

  3. Roast chicken and tomatoes

    Roast chicken and tomatoes

    Reshape aluminum tin, if bent, then add whole grape tomatoes and toss with 1 tablespoon olive oil, ¼ teaspoon salt, and pepper as desired. Transfer baking sheet and tin to oven and roast together until breadcrumb topping is golden, chicken is cooked through and no longer pink, and tomatoes are tender, about 12 minutes.

  4. Make garlic paste

    Make garlic paste

    While chicken and tomatoes roast, mince garlic and, still on cutting board, sprinkle over ⅛ teaspoon salt (this will help break down the garlic and extract its natural juices). Using a large knife, carefully scrape over mixture at a 45° angle, pressing down. Repeat until garlic is broken down and a paste forms. Transfer garlic paste to bowl with reserved 1 tablespoon Parmesan.

  5. Make Caesar dressing

    Make Caesar dressing

    Trim and discard tough stem of romaine heart, then quarter lengthwise and rinse thoroughly. Halve lemon. To bowl with Parmesan and garlic paste, add anchovy paste, mayonnaise, and juice of ½ lemon. Whisk until smooth (this is another great task for a friend!), then taste and add salt and pepper as desired.

  6. Plate Parmesan-crusted chicken

    Divide chicken and romaine between serving plates. Scatter over roasted tomatoes and drizzle over Caesar dressing. Squeeze juice of remaining lemon over everything. Enjoy!
