We love the classic hamburger, but it's time for a little remix. In this Popular Recipe, beef burgers are infused with Mediterranean spices, sandwiched between toasty brioche buns, and slathered with harissa aioli. Known for its complex flavors and subtle heat, harissa hails from North Africa as one of our favorite dipping sauces for an obligatory side of fries—sweet roasted carrot fries, that is.

    Preheat oven to 425°F. Rinse all produce. Cut cucumber into ¼-inch slices and place in a medium bowl. Add red wine vinegar and ¼ teaspoon salt and toss to combine. Set aside to pickle until ready to serve. Halve carrots lengthwise, then halve crosswise to create fries. Roughly chop dill leaves, discarding stems.

  2. Roast Carrot Fries

    On a baking sheet, toss carrots with sumac, 1 tablespoon olive oil, ½ teaspoon salt and pepper as desired. Arrange in a single layer and roast, flipping halfway through, until tender and slightly charred, about 15 minutes total.

  3. Make Burgers

    Pat beef dry with paper towel and add to a large bowl with spice mix and mustard. Season with ½ teaspoon salt and pepper as desired. Using your hands, mix well, then form into 2 equal patties, about 1-inch thick. Using your thumb, create a dimple on top of each.

  4. Cook Burgers

    Cook Burgers

    Heat 1 teaspoon olive oil in a medium pan over medium heat. When oil is shimmering, add burgers and sear until charred and medium rare, about 5 minutes per side. Transfer to a plate to rest for about 5 minutes.

  5. Make Harissa Aioli and Toast Buns

    Make Harissa Aioli and Toast Buns

    While burgers cook, in a small bowl, stir together mayonnaise and 1 teaspoon harissa to combine. Season with ⅛ teaspoon salt and set aside until ready to serve. Discard remaining harissa or save for another spicy dish. Wipe pan from burgers clean and return to medium heat. Halve brioche buns crosswise, place cut-side down in pan, and toast until light golden, 2-3 minutes. Transfer to serving plates. 

  6. Plate Burgers

    Drain cucumbers. Layer burgers on bun bottoms, then harissa aioli, then pickled cucumber. Finish with bun tops. Toss carrot fries with feta and dill, and serve with your fabulous burgers. Dig in!
