    Bring a medium pot of water to a boil over high heat. Wipe mushrooms clean with a damp paper towel and thinly slice, discarding tough stems. Rinse remaining produce. Trim and discard root ends of scallions, then thinly slice. Trim and discard dark green top of leek. Halve lengthwise, then cut crosswise into 1-inch pieces. Place in a bowl of cold water, letting dirt sink to bottom. Pat chicken dry with paper towel.

    In a large bowl, whisk together soy sauce, rice wine vinegar, sesame oil, honey, crushed red pepper (skip or use half for less heat), half of scallions, and 1 tablespoon water until combined. Place sesame seeds in a medium high-sided pan over medium heat. Toast, stirring, until golden and fragrant, 3-5 minutes. Whisk toasted sesame seeds into bowl with sauce. Set aside. Remove leek from water and pat dry with paper towel.

    Cook Chicken and Vegetables

    Wipe pan from sesame seeds clean add 1 tablespoon canola oil over medium-high heat. When oil is shimmering, add chicken, ¼ teaspoon salt and black pepper. Cook, breaking up, until browned, about 5 minutes. Transfer chicken to bowl with sauce and set aside. Wipe pan clean and return to medium-high heat with 1 tablespoon canola oil. When oil is shimmering, add mushrooms and leek. Sauté until softened, 5-7 minutes.

    While vegetables cook, season pot of boiling water generously with salt and add long life noodles. Cook until al dente, 2-3 minutes. Drain and rinse under cold water for 30 seconds to stop cooking—this prevents the noodles from releasing too much starch and turning gummy.

    Reduce heat under vegetables to medium and season with ¼ teaspoon salt and black pepper as desired. Stir in long life noodles, then push everything to outer edges of pan. Add chicken and sesame sauce to center of pan and simmer until sauce is thickened, about 1 minute. Add spinach and stir to combine everything. Cook until spinach is just wilted, 1-2 minutes more. Remove pan from heat.
