Italian Sausage Heroes with Grilled Bell Peppers

A hero is someone you look up to and it’s a large satisfying sandwich fit for a king. Here, bread rolls are stuffed with spicy grilled Italian sausages and charred bell pepper and onion, and then topped with a stupid good sweet and tangy mustard-mayo sauce. Crisp romaine lettuce is tossed with red wine vinaigrette, making the perfect side dish for hefty sandwiches.

    Preheat grill or grill pan to medium-high heat. Rinse bell pepper and halve lengthwise, discarding seeds, then slice lengthwise into ¼ inch strips. Peel onion and thinly slice into rings. Roughly chop olives.

    In a large bowl, toss bell pepper and onion with oregano and 1 tablespoon olive oil. Season with ¼ teaspoon salt and pepper as desired. Add to grill in a single layer, allowing excess oil to drip off. Grill until lightly charred on both sides, about 4 minutes per side. Remove from grill and cover loosely with foil to keep warm.
  3. Make Vinaigrette and Sauce

    Make Vinaigrette and Sauce

    While vegetables grill, use bowl from vegetables to whisk together red wine vinegar, ½ of honey, and 1½ tablespoons olive oil until fully combined. Season with ¼ teaspoon salt and pepper as desired. In a small bowl, whisk together mustard, mayonnaise, and remaining honey. Season with ⅛ teaspoon salt and pepper as desired.
  4. Grill Sausages and Rolls

    Grill Sausages and Rolls

    Wipe grill from vegetables clean and increase heat to high. Add sausages and cook, turning occasionally, until browned on outside, 10-12 minutes. Meanwhile, halve rolls partway through, keeping intact. Add cut-side down to grill with sausages. Grill until lightly golden, 2-3 minutes.
  5. Toss Salad

    Toss Salad

    While sausages grill, rinse romaine hearts, pat dry with paper towel, and slice into ¼-inch pieces. Add to bowl with vinaigrette along with olives. Toss to coat.
  6. Plate Hero Sandwiches

    Plate Hero Sandwiches

    Cut sausages on a diagonal into ½-inch slices and return to grill in a single layer. Grill cut-side down until cooked through, about 2 minutes per side. Add to rolls along with bell pepper and onion. Drizzle over mustard sauce and serve with salad. Dig into your home-cooked hero!
