Yes, we love a classic American cheeseburger—but we're pretty passionate about this Italian-inspired version, too. Laced with oregano, mustard, and Parmesan cheese, they'll make a convert of even the most staunch burger purist. Fresh mozzarella turns perfectly gooey atop the grilled patties, which are sandwiched between toasty ciabatta buns with thick slices of tomato. To keep things as seasonal as possible, we're serving this Popular Recipe with a tomato-and mozzarella-studded corn salad.

    Preheat grill to medium-high heat. Rinse all produce. Roughly chop basil leaves, discarding stems. Roughly chop oregano and parsley leaves, discarding stems. Thinly slice 1 tomato and roughly chop remaining tomato. Shuck corn, discarding husks and silk. Slice kernels into a medium bowl, discarding cob. Halve mozzarella; cut half into 2 equal slices and roughly chop remainder. Mince garlic.

    In a large bowl, combine mustard, Parmesan, oregano, parsley, garlic, ¼ teaspoon salt, and pepper as desired. Pat beef dry with paper towel and add to bowl. Using your hands, mix well, then form into 2 equal patties, about 1 inch thick. Using your thumb, create a dimple on top of each.

  3. Grill Burgers

    Grill Burgers

    If using a grill pan, place it over medium-high heat now. When grill is just smoking, add burgers and cook until charred on bottom, 3-4 minutes. Flip and char opposite side, 2 minutes. Add sliced mozzarella to tops of burgers and continue cooking until cheese is melted and burgers are medium rare, 2 minutes more. Transfer burgers to a plate and set aside to rest for about 5 minutes.

    While burgers rest, in a medium bowl, whisk balsamic vinegar, basil, and 1 tablespoon olive oil to combine.

  5. Toss Tomato-Corn Salad

    Toss Tomato-Corn Salad

    Add chopped tomatoes, corn, and chopped mozzarella to bowl with dressing and toss to combine. Season with ¼ teaspoon salt and pepper as desired.

  6. Toast Buns and Plate Burgers

    Toast Buns and Plate Burgers

    Slice buns open horizontally and add cut-side down to grill. Toast until golden brown, 1-2 minutes. Divide bun bottoms between serving plates. Place Italian burgers with fresh mozzarella atop each bun bottom, then sliced tomatoes. Finish with bun tops and serve with tomato-corn salad. Delight in your grilled feast!
