Indian Butter Chicken Thighs with Garlic Naan

Here, we're using chicken thighs, searing them for crispy skin, then braising them in the fragrant sauce of ghee, tikka masala curry paste, ginger, garlic, and crushed tomatoes. We stir in spinach to wilt and a splash of cream for richness, then serve with warm naan swiped with garlic butter.

    Cooking Steps

    1. Sear chicken thighs

      Sear chicken thighs

      Preheat oven to 450°F. Pat chicken very dry with paper towel and season all over with ½ teaspoon salt and pepper. Heat 1 teaspoon olive oil in a medium high-sided ovenproof pan over medium-high heat. When oil is shimmering, add chicken skin-side down; sear until skin is golden and easily lifts from pan, 8-10 minutes. Transfer chicken to a plate, skin-side up (it'll finish cooking in Step 4). Reserve fat in pan, off heat, for Step 3.


    2. Prepare ingredients

      While chicken sears, rinse spinach and pat dry with paper towel. Trim and discard skin of ginger and mince. Mince garlic. Peel onion, halve, and thinly slice. Stack naan and wrap in foil.

    3. Make sauce

      Make sauce

      Return pan from chicken to medium-high heat with half of ghee (reserve remainder for Step 5). When ghee is melted, add onion. Sauté, stirring, until soft, 5 minutes. Add tikka masala curry paste, ginger, and half of garlic; sauté, stirring, until fragrant, 1-2 minutes. Add crushed tomatoes and simmer until sauce is thickened, 2-3 minutes more. Remove pan from heat and season with ½ teaspoon salt and pepper.


    4. Braise chicken and warm naan

      Braise chicken and warm naan

      To pan with sauce, still off heat, add chicken thighs skin-side up, nestling partway into sauce. Transfer pan to oven and braise until chicken is cooked through and sauce has thickened, 22-25 minutes. After 15 minutes of chicken thighs braising, transfer naan to oven to warm through, 5-8 minutes.

    5. Make garlic naan

      While naan warms, in a small pot, heat remaining garlic, remaining ghee, 2 teaspoons olive oil, and ⅛ teaspoon salt over medium heat. Cook, stirring, until ghee has melted and garlic is fragrant, 1 minute. Remove pot from heat. Once naan is warmed through, carefully unwrap foil to allow steam to escape. Brush or drizzle each piece with garlic butter, then wrap in foil again to keep warm until ready to serve.

      Divide chicken thighs between shallow serving bowls, leaving sauce behind in pan. Add cream and spinach to pan; stir to combine and wilt spinach. Spoon Indian butter sauce around chicken thighs. Serve with garlic naan. Enjoy!
