Fluffy, Chinese bao buns make the perfect base for all kinds of delicious toppings. After the success of our chicken and pork belly hoisin buns, we decided to try scallion-and-hoisin-laced beef patties—with excellent results. They’re served with crunchy cabbage slaw, sweet potato fries, and ginger-sesame aioli for dipping. Bao down to this dinner winner (we couldn’t resist!).

    Cooking Steps

    1. Prepare Ingredients

      Prepare Ingredients

      Preheat oven to 450ºF. Rinse all produce. Halve sweet potatoes lengthwise, cut lengthwise into ½-inch slices, then cut lengthwise again into ½-inch wedges. Roughly chop cilantro leaves, discarding stems. Trim and discard scallion roots and thinly slice, keeping whites and light greens separate from dark greens. Roughly chop pickled ginger. Mince garlic.

      On a baking sheet, drizzle sweet potatoes with olive oil and season with ¼ teaspoon salt. Arrange in a single layer and bake until golden brown and crisp, 20-25 minutes. Set aside.

    3. Make Aioli and Toss Slaw

      Make Aioli and Toss Slaw

      While fries bake, in a large bowl, whisk together mayonnaise, sesame oil, rice wine vinegar, pickled ginger, ¼ teaspoon salt, and pepper as desired. Transfer half of ginger-sesame aioli to a small bowl and reserve for serving. Add slaw mix and half of cilantro to large bowl with remaining aioli and toss to coat. Set aside.

    4. Form Hoisin Beef Patties

      Form Hoisin Beef Patties

      While fries bake, in a large bowl, combine scallion whites and light greens, garlic, and 1 tablespoon hoisin. Pat beef dry with paper towel and add to bowl. Using your hands, mix well, then form into 6 equal patties, about 1 inch thick. Using your thumb, create a shallow dimple on top of each patty. Season all over with ½ teaspoon salt and pepper as desired.

    5. Warm Buns and Sear Beef

      Place 6 steamed buns on a piece of foil and loosely wrap to create a pouch, then place in oven to warm through, about 5 minutes. Meanwhile, heat ½ tablespoon olive oil in a large pan over medium-high heat. When oil is shimmering, add hoisin beef patties and sear until browned and medium rare, 2-3 minutes per side. Remove pan from heat.

    6. Plate Hoisin Beef Buns

      Plate Hoisin Beef Buns

      Toss fries on baking sheet with scallion dark greens, then transfer to serving plates. Drizzle remaining hoisin over hoisin beef patties, then tuck into warmed buns with a spoonful of ginger-sesame slaw. Garnish with remaining cilantro, and enjoy with baked sweet potato fries and reserved aioli for dipping.
