    Preheat grill or grill pan to medium-high heat. Peel onion and thinly slice as much as desired. Rinse remaining produce. Cut zucchini crosswise into ¼-inch slices. Halve bell pepper lengthwise, discarding seeds, and thinly slice into strips. Rinse basil and tear leaves into bite-size pieces, discarding stems.

    In a large bowl, toss onion, zucchini, and bell pepper with 1 tablespoon olive oil, ½ teaspoon salt, and pepper as desired. Add vegetables to grill in a single layer and cook until lightly charred, about 5 minutes per side. Transfer to a plate and set aside.

    While vegetables grill, dab 1 teaspoon olive oil onto a clean dry surface. Divide pizza dough into 2 equal pieces and place onto oiled surface. Using a rolling pin or the heels of your hands, roll and stretch each piece to about ¼-inch thickness.
  4. Season Sauce

    Season Sauce

    Place pizza sauce in a small pot over medium heat and cook until warmed through, about 3 minutes. Stir in heavy cream and vodka, if using. Cook until flavors are melded, about 3 minutes more. Remove pan from heat.
  5. Grill Pizza

    Wipe grill from vegetables clean. Rub 2 tablespoons olive oil over both sides of pizza dough pieces, dividing evenly. When grill is just smoking, add pizza dough in a single layer and cook, working in batches if necessary, until charred on both sides, about 4 minutes per side, then remove from grill.
  6. Plate Pizza

    Spread sauce on top of each pizza, leaving a ½-inch border. Add cheese mix and grilled vegetables, sprinkling evenly. Return pizza to grill, cover with lid or aluminum foil, and cook until cheese is melted, 5-10 minutes. Garnish with basil. Cut pizza into slices and commence the feast. Refrigerate any leftovers in an airtight container for up to 3 days.
