On a recent culinary team field trip to a beloved pizza spot in Brooklyn, we discovered an ingenious dish that married two of our biggest loves: chicken Caesar salad, and pizza! Chef Andrea has made her own twist by swapping in whole-wheat pizza dough and making it all about the grill: grilled crust, grilled chicken, and grilled lemon to lend a smoky flavor to the classic creamy Caesar dressing.

    Preheat grill to medium heat. Let pizza dough soften at room temperature. Rinse romaine, trim and discard tough stem, then thinly slice crosswise. Rinse tomatoes and halve. Halve lemon. Mince garlic and, still on cutting board, sprinkle over ⅛ teaspoon salt. Using a large knife, repeatedly scrape over mixture at a 45° angle, pressing down, until a smooth paste forms. Transfer garlic paste to a large bowl.

    Add anchovy paste, mayonnaise, grated Parmesan, and juice of ½ lemon to bowl with garlic paste and whisk until smooth. Add romaine and tomatoes to bowl—but wait to toss them in the dressing until it's time to serve, so the salad doesn't turn soggy.

  3. Roll Out Dough

    Roll Out Dough

    Sprinkle flour onto a clean, dry surface. Using a rolling pin or the heels of your hands, roll and stretch pizza dough into a rectangular shape, about ¼-inch thick. If the dough shrinks back while rolling it out, keep going! Apply consistent pressure and rotate frequently to help achieve an even shape.

  4. Grill Chicken

    If using a grill pan, place it over medium heat now. Pat chicken dry with paper towel. Rub all over with 1 tablespoon olive oil, ½ teaspoon salt and pepper as desired. When grill is just smoking, add chicken and cook until lightly charred, cooked through, and no longer pink, 4 minutes per side. Transfer chicken to a plate and set aside to rest, about 5 minutes.

  5. Grill Pizza and Char Lemon

    While chicken rests, rub ½ tablespoon olive oil onto each side of pizza dough. Transfer to grill and cook until golden on bottom, 1-2 minutes. Flip dough and sprinkle over shredded cheese blend. Grill until cheese is melted, 1-2 minutes more. Meanwhile, grill remaining lemon cut-side down, alongside pizza, until slightly charred, 2-3 minutes. If your grill isn't big enough, just wait until the pizza's done!

  6. Plate Chicken Caesar Pizza

    Plate Chicken Caesar Pizza

    Cut grilled chicken into ¼-inch slices, add to bowl with salad, and toss everything to coat with dressing. Pile chicken Caesar salad onto pizza, cut into slices, and top with shaved Parmesan. Squeeze over charred lemon and enjoy!
