Feta Burgers with Mixed Green Salad

Craving something a little different from the all-American hamburger, Chef Taylor dreamed up this Greek-inspired version. She combines crumbled feta with the beef before shaping and searing the patties to get pockets of briny, creamy cheese in every bite. The mayo spread on top gets a smoky kick from harissa, a Tunisian spice paste. Stacked onto toasted buns and paired with a simple herb salad, these burgers take one of our favorite summer dishes to a whole new level of delicious.

    Slice buns open horizontally, if they arrived whole. Rinse all produce. Roughly chop oregano and parsley leaves, discarding stems, and place in a medium bowl for making burgers. Roughly chop dill leaves, discarding stems, place in a large bowl, and set aside for Step 5.

  2. Form burgers

    Form burgers

    To bowl with oregano and parsley, add feta, 1 packet mustard, ¼ teaspoon salt, and pepper as desired. Pat beef dry with paper towel and add to bowl. Using your hands, mix well, then form into 2 equal patties, about 1 inch thick—this is a great task for a kitchen helper. Using your thumb, create a dimple on top of each.

  3. Toast buns

    Place buns cut-side down in a large pan over medium heat. Toast until light golden and warmed through, 2-3 minutes. Wrap buns in foil to keep warm until ready to serve, reserving pan for the next step.

  4. Cook burgers

    Cook burgers

    Heat 1 teaspoon olive oil in pan from buns over medium-high heat. When oil is shimmering, add burgers and sear, without flipping, until browned on bottom, about 4 minutes. Flip and continue searing until browned and medium rare, 3-4 minutes more. Transfer burgers to a plate and set aside to rest.

  5. Make dressing and harissa mayo

    Make dressing and harissa mayo

    While burgers cook, to large bowl with dill, add red wine vinegar, remaining mustard, 2 tablespoons olive oil, ¼ teaspoon salt, and pepper as desired and whisk to combine (a kitchen helper can do this part). In a small bowl, whisk together mayonnaise and up to half of harissa (it's spicy, so feel free to use less). Use remaining harissa for another use, like stirried into hummus for a snack.

  6. Plate feta burgers

    Pat mixed lettuces dry with paper towel and add to bowl with dressing, along with whole grape tomatoes, and toss to coat. Transfer bun bottoms to serving plates and top with feta burgers, then harissa mayo, then a handful of salad. Finish with bun tops. Serve with remaining salad. Dig in!
