Chicken and Chickpea Rotini with Tomato-Cream Sauce

Our Test Kitchen has fallen in love with Banza’s chickpea rotini—a high-protein, gluten-free pasta that cooks up just like the real thing. Here, we add chicken, pan-roasting the meat with crushed garlic and bursting grape tomatoes. While the chicken rests, the garlic and tomatoes are cooked down further with white wine and cream to make a luscious sauce. We finish with broccolini for a seasonal veggie component.

  • 10" medium high-sided pan

Cooking Steps

  1. Prepare ingredients

    Prepare ingredients

    Bring a medium, covered pot of water to a boil over high heat. Rinse all produce. Trim and discard woody bottoms of broccolini, then cut crosswise into 2-inch pieces. Using the flat side of a knife, gently crush garlic cloves. Pat chicken dry with paper towel and season all over with ½ teaspoon salt and pepper as desired. Heat 2 teaspoons olive oil in a medium high-sided pan over medium-high heat.

  2. Cook chicken and tomatoes

    Cook chicken and tomatoes

    When oil in pan is shimmering, add chicken; sear until golden on bottom, about 6 minutes. Flip chicken and scatter around whole grape tomatoes and crushed garlic in pan. Continue searing until chicken is cooked through and no longer pink, tomatoes are bursting, and garlic is soft, 6 minutes more. Transfer chicken and garlic to cutting board and set aside to rest, leaving tomatoes behind in pan, off heat, for Step 4.

  3. Cook rotini and broccolini

    Cook rotini and broccolini

    While chicken and tomatoes cook, season boiling water generously with salt. Stir in chickpea rotini and cook for 3 minutes. Then, add broccolini and cook until rotini is al dente and broccolini is bright green and tender, 4 minutes more. Reserve ½ cup pasta cooking water, then drain rotini and broccolini and return to pot, off heat.

  4. Cook sauce

    Finely chop garlic, then return to pan with tomatoes. Return pan to medium-high heat with 1 tablespoon olive oil. When oil is shimmering, add white wine and cook, scraping up browned bits from bottom of pan, until liquid is reduced by half, 1-2 minutes.

  5. Finish tomato-cream sauce

    Add heavy cream to pan with tomatoes, still over medium-high heat. Using a potato masher or spoon, mash tomatoes to release their juices. Cook, stirring, until liquid is slightly reduced, 1-2 minutes more. Remove pan from heat. Taste and season with salt and pepper as desired.

  6. Plate chicken and chickpea rotini

    Plate chicken and chickpea rotini

    Cut rested chicken into ¼-inch slices. To pot with rotini and broccolini, still off heat, stir in sliced chicken and tomato-cream sauce. Adding 1 tablespoon at a time, stir in reserved pasta cooking water until sauce is silky and coats pasta. Divide chicken and chickpea rotini between serving bowls and garnish with black pepper as desired. Enjoy!
