This is Chef Giuseppe’s take on a rarer version, with perfectly sweet shrimp tossed in tomato sauce with mini penne and broccolini, all under a gooey lid of mozzarella and Parmesan. Cooking Steps

  1. Sear shrimp

    Sear shrimp

    Preheat oven to 450°F. Bring a medium pot of water to a boil over high heat. Reshape aluminum tin, if bent. Pat shrimp dry with paper towel; season with ¼ teaspoon salt and pepper. Heat 2 teaspoons olive oil in a medium pan over medium-high heat. When oil is shimmering, add shrimp and cook, stirring occasionally, until opaque and just pink, 4-6 minutes total. Using a slotted spoon, transfer shrimp to tin, reserving pan for Step 3.

  2. Prepare ingredients

    While shrimp cook, rinse all produce. Trim and discard woody bottoms of broccolini, then cut crosswise into 1-inch pieces. Roughly chop or tear basil leaves, discarding stems. Peel onion, halve, and thinly slice. Mince garlic.

  3. Simmer tomato sauce

    Simmer tomato sauce

    Wipe pan from shrimp clean and return to medium-high heat with 2 teaspoons olive oil. When oil is shimmering, add onion; cook, stirring, until soft, 3-4 minutes. Add garlic; cook until fragrant, 1 minute more. Add tomato purée. Increase heat to high and bring to a boil, then reduce to medium and simmer until sauce has thickened, 7-10 minutes. Remove pan from heat. Season with ½ teaspoon salt and pepper.

  4. Boil penne and broccolini

    Boil penne and broccolini

    While sauce simmers, season boiling water generously with salt. Stir in penne and cook until almost al dente, about 5 minutes. Then, add broccolini to pot and cook until penne is al dente and broccolini is tender, 2-3 minutes more. Drain and return to pot, off heat.

  5. Bake shrimp Parmesan

    Bake shrimp Parmesan

    To pot with penne and broccolini, still off heat, add cooked shrimp, tomato sauce, half of Parmesan, and half of basil; stir to combine. Place tin on a baking sheet. Pour in penne and spread in an even layer. Sprinkle over mozzarella and remaining Parmesan. Bake until cheese is golden and bubbling, 5-7 minutes.

    Divide shrimp Parmesan between serving plates and garnish with remaining basil. Dig in!
