St. Patrick’s Day is incomplete without shepherd’s pie, so we’re returning the fan favorite to this week’s menu. Beef is simmered with onion, carrot, parsnip, and Worcestershire to create a rich stew. It’s smothered with creamy mashed potatoes and baked until golden for a hearty holiday dish that keeps us coming back year after year.

Cooking Steps

  1. Prepare ingredients

    Prepare ingredients

    Preheat oven to 450°F. Rinse all produce. Peel potatoes and cut into 1-inch pieces. Quarter carrots and parsnips lengthwise, then cut crosswise into ¼-inch pieces. Thinly slice chives. Peel onion and cut into small dice.


  2. Make mashed potatoes

    Make mashed potatoes

    Place potatoes in a medium pot and cover with cold water by 1 inch. Season generously with salt and bring to a boil over high heat. Cook until tender when pierced with a knife tip, 10-12 minutes (move on to Step 3, but don't forget to come back). Drain potatoes and return to pot, off heat. Add butter and, using a large fork or potato masher, mash until smooth. Season with salt and pepper. Cover pot and set aside for Step 6.

  3. Brown beef

    While potatoes cook, pat beef dry with paper towel. Heat 1 teaspoon olive oil in a medium high-sided ovenproof pan over medium-high heat. When oil is shimmering, add beef. Season with ½ teaspoon salt and pepper as desired. Cook, breaking up, until browned, about 5 minutes. Using a slotted spoon, transfer beef to a bowl and set aside. Wipe pan clean for the next step.

  4. Cook vegetables

    Cook vegetables

    Return pan from beef to medium-high heat with 1 tablespoon olive oil. When oil is shimmering, add carrots, parsnips, and onion; cook, stirring, until softened, 6-8 minutes. Add tomato paste and beef and cook, stirring to combine, 1-2 minutes more. Season with ¼ teaspoon salt and pepper as desired.

  5. Finish beef and vegetable filling

    Finish beef and vegetable filling

    Reduce heat under pan with beef and vegetables to medium. Add flour and cook, stirring, until no longer visible, about 1 minute. Add Worcestershire sauce, bouillon cube, and 1 cup water. Cook, stirring, until liquid is thickened and bouillon cube is dissolved, about 3 minutes more. Remove pan from heat.

  6. Bake and plate shepherd's pie

    Spread mashed potatoes over beef and vegetable filling in pan, still off heat. Transfer pan to oven and bake until lightly browned on top, about 5 minutes. Garnish with chives. Serve family-style or divide shepherd's pie between serving plates and dig in!
