Classic Lemon Bars with Powdered Sugar

Lemon bars are a much-loved staple for a reason: They’re tangy, sweet, and have a deliciously buttery crust. Our take on the all-American dessert doesn’t stray far from the classic—if it ain’t broke, don’t fix it! Shortbread dough is topped with creamy lemon curd, baked until perfectly gooey, and then chilled. A sprinkling of powdered sugar gives these bars their signature look (and a little added sweetness). You’ll want to add this to your recipe book!

    Cooking Steps

    1. Grease Tin

      Preheat oven to 350°F. Place butter in a medium heat-safe bowl and microwave in 30-second intervals until completely melted. Drizzle 1 teaspoon melted butter inside aluminum tin, reshaping if bent, and rub all over to coat tin. 

    2. Make Crust

      Add 1 cup flour, ½ cup granulated sugar, and ¼ teaspoon salt to bowl with melted butter and stir to combine, making sure all ingredients are incorporated and saving remaining flour and sugar for Step 3. Spoon dough into greased tin, pressing into an even layer on the bottom. Using a fork, lightly pierce each corner of the dough. Place tin on a baking sheet and bake until lightly golden, about 12 minutes.

    3. Make Lemon Filling and Fill Crust

      While crust bakes, in a large bowl, whisk remaining flour and remaining granulated sugar to combine. Whisk in lemon juice and 3 eggs until fully combined, about 1 minute. Once crust is baked, keep tin on baking sheet, and pour lemon filling on top. 

    4. Bake Bars

      Bake Bars

      Return baking sheet to oven and bake lemon bars until filling has thickened and doesn't jiggle, 20-22 minutes. While bars bake, get a head start on cleaning! Once baked, remove lemon bars from oven and allow to cool until set, 10 minutes. Place in the freezer to chill until firm, 20-30 minutes. 

    5. Plate Lemon Bars

      Dust cooled lemon bars with powdered sugar (try putting the powdered sugar in a sieve and lightly tapping the side to evenly dust the bars). Cut into 6 pieces and enjoy!
